PRO TIPS

When I developed this recipe, I knew I wanted a ham steak glaze that was simple but tasted like it simmered all afternoon — buttery, sweet, and just tangy enough to balance it out. Here are a few tricks that make it turn out perfect every time:

  • Don’t rush the caramelization. Let the glaze bubble and thicken for a few minutes before adding the ham back to the pan. That’s where the glossy, sticky magic happens!

  • Use real butter. Margarine won’t give the same rich flavor or smooth glaze texture.

  • Adjust the sweetness. Prefer it less sweet? Use Dijon as-is and skip the honey or maple drizzle. Love it sticky-sweet? Add an extra teaspoon of maple / honey.

  • Deglaze for extra flavor. After searing the ham, add a splash of water or cider vinegar to lift all those caramelized bits — that’s pure flavor.

  • Serve it right away. The glaze is best when warm and silky, before it starts to set.

These are the main ingredients you need for making brown sugar dijon glazed ham steak.  Find the full ingredients and measurements in the recipe card below

Ham Steak: The star of the show! Thick-cut and fully cooked, ham steak browns beautifully in the skillet while soaking up that sweet and tangy glaze.

Butter: Adds richness and helps the brown sugar melt into a smooth, glossy sauce that coats the ham perfectly.

Brown Sugar: The base of the glaze — it caramelizes for that signature sticky-sweet flavor and golden color.

Dijon Mustard: A touch of tang balances the sweetness and adds depth. It gives the glaze a slightly sharp, savory edge that pairs beautifully with ham.

Honey or Maple Syrup: Either option works! Honey gives a floral warmth, while maple syrup adds a cozy, fall-like flavor.

Apple Cider Vinegar: The secret ingredient that cuts through the richness and keeps the glaze from being too sweet by brightening every bite.

VARIATIONS TO TRY

Once you fall in love with this buttery brown sugar glaze (and you will!), there are so many fun ways to change it up:

  • Maple Dijon Twist: Use pure maple syrup instead of honey for a deeper, fall-inspired sweetness that pairs beautifully with roasted veggies or sweet potatoes.
  • Spicy Kick: Add a pinch of cayenne or substitute your honey/maple for hot honey – produces a sweet-heat balance that wakes up your taste buds.
  • Garlic & Herb: Stir in a little minced garlic and fresh thyme or rosemary for a savory, holiday-style glaze.
  • Pineapple Glaze: Replace the vinegar with pineapple juice for a tropical, tangy sweetness — amazing if you’re serving it with rice or grilled fruit. (See you soon summer cookouts!)
  • Orange Dijon Glaze: Swap the apple cider vinegar for orange juice and even a bit of orange zest for a bright citrus twist that feels extra fresh.
  • Brown Sugar Bourbon: Add a splash of bourbon (let it cook off!) for a smoky-sweet glaze that’s next-level delicious for special occasions.

FREQUENTLY ASKED QUESTIONS

Can I use leftover holiday ham instead of a ham steak?
Absolutely! Just slice your cooked ham into thick pieces and warm them in the glaze until coated and heated through. It’s a great way to reinvent leftovers.

What kind of ham steak should I use?
Look for a fully cooked, bone-in or boneless ham steak about ½–¾ inch thick. Avoid heavily smoked or flavored ones — they can overpower the glaze.

Can I make this recipe ahead of time?
You can prep the glaze ahead! Store it in a jar in the fridge for up to 3 days, then reheat it gently and add your ham steak when ready to serve.

How do I keep the glaze from burning?
Keep the heat at medium to medium-low once the sugar starts melting. Stir often and don’t walk away — caramelized doesn’t mean scorched!

What can I serve with glazed ham steak?
This pairs beautifully with mashed potatoes, roasted veggies, green beans, dinner rolls or even breakfast sides like eggs and biscuits.

Can I use honey and maple syrup?
Yes! Use half of each for the best of both worlds — floral sweetness from the honey and cozy depth from the maple.

Is apple cider vinegar necessary?
It really helps balance the sweetness, but if you’re out, a squeeze of lemon juice or a splash of white vinegar works too.
