Cut 3 lb yukon gold potatoes into quarters and boil until fork tender
While potatoes boil, mince 4 cloves garlic and slice ¼ c green onion
Mash potatoes with a fork, and add all other ingredients. (½ c milk, 4 tbsp unsalted butter, 4 oz cream cheese, ⅝ c sour cream, 4 cloves garlic, ¼ c green onion, 1-2 tsp salt [1], 1 tsp black pepper, ¾ tsp onion powder) Mix until well combined.
Notes
Salt quantity depends on if you're serving immediately or refrigerating overnight. If you are serving immediately, use 1 tsp salt. If serving the next day use 2 tsp salt, as the dairy will eat up some of the salt.
